This is my take on a spicy and healthy version of taco. The chickpea tortillas are great in flavor and are even good on their own, but with the spicy lentils and greens the flavors are amazing.
The tortillas are so easy to make that you can even make them on a busy week night.
Vegan tacos with chickpea tortilla

Ingredients
- TORTILLA
- 1 (250 ml) cup water
- ¾ (200 ml) cup chickpea flour
- 1 tsp salt
- 1 tsp cumin
- ½ tsp chili powder
- ½ tsp turmeric
- ½ tsp garlic powder
- OAT CREME FRAICHE DRESSING
- Oat creme fraiche
- 2 tsp ketchup
- ½ tsp salt
- 1 tsp garlic powder
- SPICY LENTILS
- 1 can lentils
- 4 small tomatoes
- Taco spice
Instructions
- TORTILLA: Mix all the ingredients until smooth. Heat some olive oil in a frying pan. Turn the tortillas over when they start to look a little dry.
- SPICY LENTILS: Heat some olive oil in a pan and put the lentils, chopped tomatoes and spice in the pan on medium heat. Cook for a few minutes.
- Other ingredients: Avocado, red cabbage, leaves, salsa, fresh coriander and lime.
