This healthy stir-fry is perfect to make on a busy week night because it is very easy and quick to make. Basically just chop all the ingredients into small pieces, add spices and the cooked barley. It is also really good served with some sour cream.
If you prefer the dish a little less spicy I would recommend not adding the jalapeno, and a little less chili.
Healthy stir-fry

Ingredients
- 1 Chicken fillet
- 1 small onion
- 1 small paprika
- ½ chili
- 3 button mushrooms
- A small handful of sun-dried tomatoes
- A few jalapeno
- 2-3 tbsp soy sauce
- 1-2 tbsp sweet chili sauce
- Salt
- Pepper
- Chili powder
- 1 serving of barley
Instructions
- Cut the chicken and vegetables into small pieces.
- Cook the chicken and add all the vegetables.
- Cook the barley and mix it into the stir fry.
- Add the soy sauce and chili sauce, and the spices.
