Inspired by the article about Vietnam we made some Vietnamese vegan spring rolls. These spring rolls are really light and healthy and can be made in only a few minutes which makes them great for lunch, dinner or as a snack. And they work really well together with peanut sauce.
Vegan spring rolls

Ingredients
- SPRING ROLLS
- Paprika
- Mango
- Avocado
- Rice wrappers
- Coriander
- PEANUT SAUCE
- 2 tbsp peanut butter
- 4 tsp less sodium soy sauce
- 6 tbsp water
- ½ lime
Instructions
- Chop the paprika, mango and avocado into long strips.
- Follow the instruction on the rice wrappers.
- Add equal amounts of the vegetables and some chopped coriander on to the rice wrappers and wrap.
- Mix together all the ingredients for the sauce.
