Waffles doesn’t necessarily have to be sweet and unhealthy. You can actually also make waffles with vegetables, making them perfect to eat for breakfast or as a side dish for dinner.
These waffles taste amazing served with a fried egg.
If you feel like experimenting a little then try replacing some of the carrots with other vegetables.
Vegetable waffles

Ingredients
- 4 medium potatoes
- 4 small carrots
- 2 eggs
- 50 g cheese (25 g parmesan, 25 g mild cheese)
- Salt
- Pepper
- Butter
Instructions
- Grate the potatoes and carrots and squeeze out as much water as you can.
- Mix in the eggs, grated cheese and salt and pepper.
- Grease the waffle iron with some butter and add a couple of tbsp. of the batter. Cook until golden.
- Serve with a fried egg.
