Danish klejner is a cake quite similar in taste to doughnuts. This recipe is used in the old town in Aarhus, Denmark. The old town is an open air museum with an interactive presentation of Danish history. Read more about it here.
The recipe is an old recipe from the 1800s. Some older recipes contain ingredients that are difficult to find it stores, but this recipe uses only “normal” ingredients.

Ingredients
- 750 ml water
- 300 g icing sugar
- 300 g butter
- 5 g cardamom
- 50 g honey
- ½ lemon zest and juice
- 6 eggs
- 250 ml water
Instructions
- Mix all the ingredients together.
- Leave to cool in the fridge for a few hours or over night.
- Roll the dough out until it is about 5 mm thick.
- Cut the dough into small diamond-shaped strips, 5x5 cm. Then make a lengthwise cut in the middle of each, and pull one end of the piece through the hole to make a knot. Here is a video to show you how: https://www.youtube.com/watch?v=2bFxUgTYhlo
- Cook/fry in oil until they are golden.
