This recipe will be enough to make 6 tarts.
Ingredients
DOUGH
1 egg yolk
50 g icing sugar
100 g soft butter
150 g flour
CHEESECAKE FILLING
230 g cream cheese
60 ml sugar
2 tbsp heavy cream
¼ tsp salt
½ tsp vanilla extract
1 egg
Raspberries for decorating
Icing sugar for decorating
Instructions
DOUGH
Mix the soft butter and flour, then add the egg and icing sugar. Knead the dough quickly until it is smooth. Roll the dough out and place in tart pans. Press the dough into the pan.
Pre-bake the tarts for 10 minutes on 190 degrees Celsius.
CHEESECAKE FILLING
Beat the cream cheese until it is smooth.
Add sugar, salt, vanilla and heavy cream. When well mixed add the egg and mix until just combined.
Add the filling to the pre-baked tarts.
Bake for 20 minutes on 180 degrees Celsius.
Decorate with raspberries and icing sugar. You could also use frozen raspberries.
