Vegan spring rolls

Ingredients
  • SPRING ROLLS
  • Paprika
  • Mango
  • Avocado
  • Rice wrappers
  • Coriander
  • PEANUT SAUCE
  • 2 tbsp peanut butter
  • 4 tsp less sodium soy sauce
  • 6 tbsp water
  • ½ lime
Instructions
  1. Chop the paprika, mango and avocado into long strips.
  2. Follow the instruction on the rice wrappers.
  3. Add equal amounts of the vegetables and some chopped coriander on to the rice wrappers and wrap.
  4. Mix together all the ingredients for the sauce.
