Vegetable waffles

Ingredients
  • 4 medium potatoes
  • 4 small carrots
  • 2 eggs
  • 50 g cheese (25 g parmesan, 25 g mild cheese)
  • Salt
  • Pepper
  • Butter
Instructions
  1. Grate the potatoes and carrots and squeeze out as much water as you can.
  2. Mix in the eggs, grated cheese and salt and pepper.
  3. Grease the waffle iron with some butter and add a couple of tbsp. of the batter. Cook until golden.
  4. Serve with a fried egg.
