Danish Æbleskiver - Pancake puffs

- 250 g flour
- 1 tsp baking soda
- 50 g sugar
- ¼ tsp salt
- ¼ tsp cardamom
- 1 tsp lemon zest
- 500 ml buttermilk
- Butter to grease the pan
- Icing sugar for dipping
- Sift flour and baking soda together in a bowl.
- Add sugar, salt, cardamom and lemon zest and mix.
- Add the buttermilk and mix until the batter is smooth.
- Heat the Æbleskive pan and grease with butter.
- Fill the holes ¾ with the batter.
- Let them cook a few minutes before you turn them using a knitting needle or something similar.
- Sprinkle with icing sugar. Æbleskiver also tastes great with jam.
