Danish Æbleskiver - Pancake puffs

30 Æbleskiver
Ingredients
  • 250 g flour
  • 1 tsp baking soda
  • 50 g sugar
  • ¼ tsp salt
  • ¼ tsp cardamom
  • 1 tsp lemon zest
  • 500 ml buttermilk
  • Butter to grease the pan
  • Icing sugar for dipping
Instructions
  1. Sift flour and baking soda together in a bowl.
  2. Add sugar, salt, cardamom and lemon zest and mix.
  3. Add the buttermilk and mix until the batter is smooth.
  4. Heat the Æbleskive pan and grease with butter.
  5. Fill the holes ¾ with the batter.
  6. Let them cook a few minutes before you turn them using a knitting needle or something similar.
  7. Sprinkle with icing sugar. Æbleskiver also tastes great with jam.
