Eirins Tomato Chicken Soup
- 2-3 chicken filets cut into pieces
- 2 cans of chopped tomatoes
- 1 jar of salsa (230 g)
- 300 ml water
- 300 ml single cream
- 1 chicken bouillon cube
- 1 chopped onion
- 1 chopped red onion
- Coriander
- 1 garlic clove
- Curry powder
- Cook everything together in a pot until it is tender.
- Use a hand blender to make it into a smooth soup.
- Add cream and bring to a boil.
- Cook the chicken pieces and add it to the soup 5 minutes before the soup is served.
- Serve the soup with a little sour cream and coriander.
