Carrot cupcakes with chocolate

- 1,5 eggs
- 125 ml neutral oil
- 175 g sugar
- 1 tsp cinnamon
- 1 tsp vanilla sugar
- ¼ tsp nutmeg
- ¼ Tbsp. baking soda
- ¼ Tbsp. baking powder
- 165 g flour
- 50 g chopped dark chocolate
- 200 g grated carrots
- ½ grated apple
- Topping:
- 100 g soft butter
- 250 g powdered sugar
- 200 g cream cheese
- 1,5 Tbsp. vanilla sugar
- Mix together the eggs, oil and sugar. Then add all the dry ingredients. Mix in the carrots, apple and chocolate.
- Bake in the oven on 180 degrees Celsius for about 25 minutes, or until a cake pin comes out clean.
- Topping: Mix the butter, vanilla sugar and powdered sugar, then add the cream cheese and mix well. Let the cupcakes cool before you add the topping.
